POWERPLANT'S SOUL FOOD STEW

3 c veg stock


4 c filtered water

1 1/2 bunch collard greens (cut into 1'' strips)

1/2 red onion

1/2 tablespoon minced garlic

1 c carrots (diced into 1 1/2'' pieces)

1 c sweet potatoes (diced into 1 1/2'' pieces)

1 1/2 c black-eyed peas

3/4 tablespoon sea salt

1/2 tablespoon black pepper

Olive oil to sauté

Serve with a side of hot sauce (Powerplant Hot Sauce works great!)




In a stock pot, sauté garlic and onion in olive oil. When golden brown, add carrots and sauté until carrots are somewhat softened. Add veg stock, water, and black-eyed peas. Bring to a boil. Boil until peas are soft. When peas are soft, reduce heat and add sweet potatoes. Add salt and pepper to taste and simmer until peas and potatoes and carrots are to desired softness. Turn off heat and add collard greens. Serve with a side of your favorite hot sauce (preferably Powerplant Hot Sauce!). Serve up and enjoy!
